And they tell you WHY certain ingredients work and WHY certain techniques work. Once you understand why brown sugar creates moisture, you can fiddle with your own recipes and make them better. If you want a baking bible, this one teaches and entertains. And if you follow the recipes as they lay them out, you can try a recipe for company without a test run and you know for a fact it will turn out beautifully.
