Sweet BBQ Lamb Chops

A sweet and savory lamb dish over a spicy mashed potato

Lamb Shoulder
    Serves 2
    Ingredients:
  • 1 LAMB CHOP SHOULDER
  • CUP FAVORITE BBQ SAUCE
  • ¼ CUP FRESH PINEAPPLE, DICED
  • 1 TABLESPOON COCONUT BUTTER, MELTED
  • 1 TEASPOON GHEE (CLARIFIED BUTTER)
  • 2 LARGE POTATOES
  • ¼ CUP MILK
  • GARLIC/ONION POWDER, TO TASTE
  • SALT/PEPPER, TO TASTE
    Directions
  1. Dice and boil potatoes for about 10 minutes.
  2. While potatoes are boiling, combine BBQ sauce, melted coconut butter, and pineapple. Set Aside.
  3. Grill or broil lamb chop to desired temperature.
  4. Drain potatoes and add in ghee, milk and seasoning. Mash well.
  5. Divide potatoes evenly between 2 plates. Slice lamb chop and divide evenly.
  6. Top each dish with half the pineapple BBQ sauce.
