Ideal for smoking sausage, fish, bacon and even cheese, this cold smoker will cure your favorite foods. Similar to hot smoking, cold smoking does it without the heat. Attach this Cold Smoke Kit to the wood chip loading port of any Masterbuilt Digital Electric Smoker. This kit may not be compatible with any other brands. The cold smoker provides continuous smoke for up to 6 hours at temperatures as lows as 100 to 120 degrees Fahrenheit.

    The only downside is that with some time and the burning of chips, a layer of soot accumulates on the inside of the chip tube. This causes you to have to gently stoke and push down your chips into the tube to get to the bottom and the heat element to continue to burn chips and make smoke. It appears that the wood chips stick in the tube and do not drop down to the heating element to burn because of the soot build up on the sides of the chip tube. The six hours with a full tube of chips and the amount of smoke it generates is an extreme advantage over the chip loader that comes with the Masterbuilt smoker. The stoking of the tube occasionally is a minor annoyance and this accessory is a must item for those long and slow smokes on brisket and pork shoulder. Also it seems that this cold smoker elevates the smokers inside temperature less than 20 degrees F. Cold smoking in cooler outside temps is now possible well below 100 degrees. Very little ash produced during a 24 hour smoke. Must burn hickory chips very well for me. The ash tray does not fit as well on the bottom as it could to catch all the ash. Another minor annoyance and just clean the area after the ash cools down and you are ready for the next smoke. Takes some time to get the leaks into the smoker at a minimum. I would recommend that the wing nut and bolt assembly not be used to secure the cold smoke kit to the digital smoker. If you set the units and mate them squarely as well as use your level feet on both the smoker and this will be okay. I do not plan to separate and use the smoker without this accessory item attached. It makes more thin blue smoke and also can provide cooler smoke than the standard chip loader on the smoker. This attachment should be standard item to include with your digital smoker. Recommended highly.

    "I have a masterbuilt elite 30 smoker it gets too hot too smoke cheese, can I hook this to my smoker."

      I have this attached to my MasterBuilt 30" (model 20070910). It appears to be similar to the "Elite" as to how this cold smoker attaches. You definitely will love this item. I've not smoked cheese, but this attachment puts out a lot of smoke and there is no need to turn your main smoker on if you wanted to keep heat to a minimum. You'd just get the heat of the smoke, whatever that is. I modified the means of attaching this cold smoker. The manufacturer's means of attachment is a pain. If you plan to leave the unit on permanently, no big deal, but if not you might want to modify how you attach it. I simply drilled a hole in the main smoker and permanently attached a bolt. Drilled a hole in the cold smoker for the bolt to slide through and then attach it with a wingnut. Easy on/off.
