    We disposed of a 10 year cutting board (maple I think) that had begun to buckle due to moisture on one side. The cracks along the seam caught a lot of dirt and I worried about contamination. We bought this slightly larger board, and I thought the color would make a nice change. I also bought the high end oil and polish to go with it, and applied it thoroughly 3 coats prior to use and once a month thereafter. I should note that the old board received none of this care and lasted a good 10 years We are now at 60 days of use and the board is warped. Strangely it is warped towards the moist surface, not away from it as I had expected. Furthermore, it has cracked all the way through the center seam. The board work surfaces and sides are generally smooth, however the end grain surfaces are quite rough. Perhaps this wood just does not lend itself to be sanded smoothly.
