I'm a bit of a knife junkie. Serious regular cook that likes the tools of the trade. I was not familiar with this brand and had been looking for one of these smaller ******** to add to my collection. I had seen the Shun but thought I'd try this first. I was not familiar with this handle composite but like it very much. It has just enough surface texture to be stable when my hands are wet. I also like the slight amount of extra heft in this handle. I sometimes find that the super light knives like the Global ones are just too light. The Shun of this size feels too insubstantial. This has a nice balance - you know its there but you wont fatigue using it. The hammer finish and wave line detail on the blade make it super pretty. I can tell I am going to loose this one to my wife. I was also surpised at the great edge out of the box. I often want to get new knives to a whetstone before I use but this one was ready to go. Well done.
Excellent knife. It has a nice, solid hold, is sharp, and allows a nice thin precision slice. The 4-inch knife is especially great for slicing onions and squash. This brand is the best I have ever owned. I am very happy with this product.
A friend of mine had one of these. When I felt how smooth and clean it cut, this became my next purchase. I bought this one and I find every excuse to use it in the kitchen. Funny thing, whenever I clean the blade, I end up slicing apart parts of the sponge. Wash by hand and dry, but be careful to not slice through and into your hand. Something to note: DON'T use a glass or vinyl cutting board. It will dull the blade as it warns in the blade care guide. I went out and spent a few bucks for a couple of new bamboo cutting boards. A well built blade.
