They are not to used with batter too thick. They're made for eggs, blending dry ingredients for cakes, etc. Because they're covered with the red plastic-y stuff, one must be careful to not let them come into contact with a knife. I got a little nick on one of them before I realized. I like the heavy handles on these. My other ones have no handle at all and that makes them uncomfortable to use. While I do like these and I'm glad I got them, I would probably order different ones if it became necessary.
