This cast iron Dutch oven is easy to use and easy to clean. The interior enamel finish reduces sticking and makes cleanup easy. The little "nubs" in the interior of the lid help collect and condense vapors inside of the pot, thereby keeping everything moist. This Dutch oven easily outperforms a previous one that I owned.
Beautiful pot, but very heavy. Cast Iron is heavy of course, but it's almost un liftable for my 120 lb frame. Add a roast and potatoes and I almost tip over. I should have gotten the smaller version. The lid alone is weighty. Work out points for doing dishes.
I have a number of enameled cast iron pieces, including LC, Staub, Chasseur, and Fontignac. The shape and size of this "casserole" is perfect for daily use. The handles are a good size and shape. The enamel has not chipped or scratched, but I only use silicone and wood utensils (never any metal). FYI: the item is made in China and the cast iron is thicker - and therefore heavier - than the ones made in France.
Okay, so at first I was a little disappointed that there were no "condensation spikes" - those little points that help what you're cooking to self-baste - on the inside of the lid. BUT, it really doesn't make a difference, since for the most part, I'm not going to be cooking a roast or a cut of meat in the pot. I've used it at least a half-dozen times since it arrived, and it's made beautiful stews, curries, chili and bolognese. Also, don't worry about the lid not fitting snugly. There has to be some space to help things cook down/reduce to perfection. It's a fantastic addition to my collection of cookware, and I really love the beautiful red enamel. Highly recommend this to everyone
