      It's really a nice reference book on classic preparation techniques. I suppose videos would be just as good, but I'm old fashioned and prefer a book sitting counter side as I prepare meals. Like most ATK books, it describes why a particular method works and in this book, it forewarns of things that could go wrong and what you can do to prevent it. There are chronological pictures of any given procedure. And the end of any chapter has several recipes that uses the cooking techniques described on the front half of the section. And of course, it gives recommendations on tools needed and why you would need them. I really enjoy that kind of technical detail and rationale behind each recipe or cooking process. And this book really is a manual with a small battery of recipes to test out. If you are looking for an actual cookbook with umpteen recipes, this is not the right book. I'm a fairly decent cook, but this book helped to solidify some of what I knew, clear up things I didn't understand and showed me some thing that I had never contemplated trying before. I'm a fan of ATK and this book does not disappoint.
