An absolutely superb book that not only gives you the truly best recipe, but tells you why it's the best. CI has already tried all the variations on ingredients and methods, and reports the findings to you. This book has saved me days and weeks of trying out recipe variations, and if I want a slightly different end product, they've told me how to get it. I actually counted the number of times they prepared and tested one recipe: it was over 100!
