If you use these chips with a "stove-top" type smoker, use less than the smoker manufacturer suggests because the chips are larger than expected and produce a stonger flavor. If you are using them with a charcoal or gas outdoor grill, use more chips because they are smaller than usual and will burn faster than your food takes to cook. The flavor produced (hickory) was good.
