I gave these to one of my sons who is a sushi chef in a 4 star restaurant. He thinks they are great, especially since they are Shun. Being a trained chef means the manufacturer of the knife is very important. Shun is one of the best. Three of my sons are chefs; two professionals. Trained chefs use their own knives in the kitchen. Restaurants do not provide for them.
