  • Great pan, mostly

Overall a great skillet. Browns nicely, stay cool skillet and lid handles, sturdy, cooks evenly. The only issue is a design thing--I don't like the riveted handles because the rivets are not nonstick and food eventually burns on. I'll have to use steel wool to clean them (yes, I'm a nerd like that!) and I am afraid I will damage the nonstick surface. When looking for cookware, I realized that there was nothing that was in my estimation "perfect" (I had a list of desired features) but this comes close enough.

Yes, it is raw iron and is sharp enough on some of the casting edge that it must be filed to be handled safely. With a woodworker's file it was possible to knock down the edge in a matter of minutes. Seasoning is easy and a one time thing. This is my very favorite wok for over a year now - and I've had many from the basic Chinese market offering to a few high end nonstick woks. It is a workhorse on my smooth top range: a great size (makes enough for four large portions of fried rice), heats quickly on a medium high setting, and is easy to clean, re-oil and store. If you are partial to cast iron, this is the wok to have in your collection.

I am a gourmet cook - graduated from the Institute of Culinary Arts. THIS PAN IS FABULOUS! Had to get used to it heating up as quickly as it does. I love the depth. My only dislike is the pan handle. It is a little too thin. It cleans up perfectly - no scouring. I could NOT believe the price - what a GREAT deal!!!

I have used this wok shaped pan for soup to curries as well as stir fry. At first glance it looks too big to cook for 2 people but the flat cooking surface and the high sides make it such a pleasure to cook anything. It takes up some space but is beautiful enough to leave on the stove. I have ordered another for my sister.

You need this saucepan! Not too big or too small. Pour spouts on both sides (perfect for Lefties!) and the lid has small and large holes for straining. SO easy to clean up! You will use this all the time! I love it.
