Got a few questions for you. Does your measurement of 15.5 inches include the handles? If yes, how many inches across the brim without handles? Does your measurement of 4 inches in height include the handles? If yes, how high is it without handles? What gauge steel is the pan composed of? Does the pan need seasoned? Thank you very much

I received my wok today as my other one was lost long ago. This is even better than my former wok at a great price. In another review a patron mentioned the petrolium product that you have to wash off. I am jeweler and know that carbon steel must have some kind of oil to prevent rusting after production. The product will rust without this protection - which is another reason for seasoning it when you receive it. I also always hand dry my stainless steel and don't let it air dry. As manufacturers are not likely to use a jewelers wax or a minwax (which you wouldn't want to cook with either, even though it smells better) it will arrive with a petrolium odor. Simply wash the pan with warm soap and water several times and season the pan. I cannot wait to break out my wok recipes! I'm going to get two more for my kids for Christmas!Read More
I make stir-frys all the time and had a nonstick wok previous but as it was beginning to peel away, I was in need of a new one. A carbon stell flat bottom is the best to get. Recieved very fast and was wrapped in plastic with oil as expected (any good one will arrive this way so that it doesn't rust) You can clean with soap and water the first time only-after that simply wipe clean and the flavor will continue to develop (kind of treat it like a cast iron pan). Season before first use with peanut oil, fresh garlic, fresh ginger, and chives. Don't put any acids such as juices or vinegar in your stir fry sauce the first few uses as it will take away some if the oil. Carbon steel can be oil hungry the first few time so keep that in mind. I have used this probably ten times now and the flavor it produces in my stir fry is amazing! I have already reccommended this to firends and family!Read More

How to Season Stainless Steel Pans
Seasoning is a process in which you prepare a pan or other cookware before you use it for the first time. When you season stainless steel pots and pans, you are filling the pores of the pan's surface with carbonized oil, which blocks the oxidation process and therefore keeps the cookware from rusting or pitting. In addition, seasoning helps to prevent food from sticking to the pan. The following steps will teach you how to season and protect your stainless steel pots and pans, so they will last longer and work better.
Stainless Steel Cookware Care
For chefs with strong opinions and a no-nonsense approach to cooking, stainless steel cookware is a popular choice. Prized for its resistance to staining, odors, and the transference of flavors, stainless steel cookware is a sound choice for any kitchen. It does require some special care, however, if you want to make the most of your pots and pans.
Best Pots and Pans
Choosing cookware for your kitchen comes down to what you like to eat. Think about the recipes that you and your family enjoy, and make sure you have the right pot or pan to prepare them. You can cover most needs with a cookware set, but if you won't use all the pieces in the set, that might not be the right choice for you. If you're buying each piece separately, then use this guide as your shopping list.
How to Break in a Stainless Steel Frying Pan
Unlike cast-iron fry pans, stainless steel fry pans do not need to be seasoned before use; and unlike nonstick fry pans, you will need to use oil to avoid food sticking to the surface of your stainless steel fry pan and even then, some food will still stick. While these facts might seem like disadvantages, they're actually the reasons why many cooks prefer to use stainless steel fry pans. High-quality stainless steel cookware may not be the best for cooking things like eggs, but for the most flavorful searing of fish, meat, and vegetables, stainless steel fry pans are unrivaled. The following steps will teach you how break in your stainless steel fry pan before each use.

Cookware Buying Guide
When you're shopping for the right cookware it's all about the metal, because that is the vehicle that delivers heat to food. Before you shop for any pots and pans, consider the different types of metals and their benefits.
How to Use a Roasting Pan
A roasting pan is a large pan, often with a lid, that is used to roast meats in the oven. The pan can be made of stainless steel, aluminum, or other metals and have enamel or nonstick coatings. Roasting pans are available in a variety of sizes to suit different types of roasting. The key to properly using a roasting pan is to leave at least 2 inches of air space around the meat that you are roasting.
Broilers vs Roasting Pans
Broiling pans and roasting pans both have specific uses. While there are many similarities between them, they each specialize in different areas. Roasting pans are normally used to prepare larger cuts of meat because of the deeper shape, which allows the meat to cook in its own juices. Broilers have a shallow, slotted base. The shallow sides of the broiler allow the food to cook more quickly while the slotted bottom of the broiler allows drippings to drain into a pan underneath.
How to Buy Cookware
The key to buying the best cookware is first considering your needs. In order to get the most from your pots and pans, think about everything from your preferred methods of cooking to your desire to spend time keeping it clean. Keep these tips in mind as you shop for cookware.
How to Cook With a Griddle
Cooking breakfast or even dinner on a griddle doesn't have to be reserved for camping anymore; in fact, you can simplify your cooking by using electric grills instead of a bunch of pots and pans. With the right electric griddle and a bit of cooking oil, you can feed a crowd in minutes. Read on for tips on cooking with a griddle indoors and out.
Best Reasons to Buy Cookware Sets
If you're shopping for pots and pans, you'll need to decide if you want to buy a set or buy them individually. While many chefs prefer to shop for individual pieces, there are several reasons why you would choose to buy a cookware set for your kitchen. If any of these situations sound like yours, then buying a set is for you.
How to Care for Nonstick Cookware
If you're looking for a way to make your food healthier, then nonstick cookware might be for you. It has a special coating that can make your cooking healthier by reducing the amount of fat and oil you need to use in your cooking. A nonstick coating also makes it easier to clean your pots and pans, and it's the best way to cook delicate food, like eggs. However, improper care can ruin the nonstick coating, which causes foods to stick, makes cleaning more difficult, and reduces the life span of your cookware.
Green Kitchen Buying Guide
They say the kitchen is the heart of a home, but in many homes, it's also the biggest source of energy waste. Kitchen lighting, refrigeration and cooking consume about 41.5 percent of the total home energy use; add space heating, cooling, and water heating to that total, and you'll see your kitchen is quite the energy hog. Creating an eco-friendly kitchen includes your choice of appliances, but it also goes beyond that; the floors, paint, pots and pans, and other kitchen items you use can make your kitchen eco-friendly as well.

Best Bookshelf Materials
It's not unusual for bookshelves to incorporate multiple materials for different features. If you haven't decided on wood, wood products, metal or glass bookshelves, look at their relative strengths and weaknesses. Look below to learn the best bookshelf materials. Wood: "Solid wood" is a common term for furniture made from lumber planks. Beware of making assumptions based on labels like "hardwood" and "softwood." Hardwoods are derived from deciduous trees and softwoods from coniferous trees; the terms don't connote their relative strengths. Balsa is a hardwood even though it is very soft, just as Douglas fir is a softwood even though it is very hard. They all make excellent, classic stock material for bookcases. Generally, harder woods are the heavier and more resistant to scratches. Still, softer woods, if treated correctly, will keep just as well as harder woods. Plywood: Made by stacking thin sheets -- "plies" -- of lumber and gluing them under pressure, plywood features grains that alternate direction for strength. Several grades are available, of differing cost. Top and bottom plies can be high-quality woods to create the appearance of fine woods, but edge veneer or molding is needed to complete the illusion. Particleboard: Wood chips glued together carry a much lower price tag than solid wood, and particleboard is denser and more uniform. It's a great choice when cost is the primary consideration. Bookshelves crafted from veneered composite boards can look and feel as good as real wood. MDF: Wood fibers, tiny chips and sawdust collected and glued into sheets form medium-density fiberboard (MDF). Low-cost MDF makes an excellent base for veneers; plus, its strength is consistent and it shapes well. Metal: There's a reason most library bookshelves are made from metal: Metal bookcases are resistant to moisture and fungus, their low-friction shelves are easier on books' bindings and metal's strength-to-weight ratio can't be beat. Their cost usually comes in below any other material. Glass: Glass bookshelves weigh more than other types, but if you plan on assembling your bookshelves only once, the style points can be well worth it. Tempered glass shelves (in wood or metal uprights, called "standards") give your home an unbeatable contemporary feel, and glass bookcases' smooth, transparent surfaces add brilliant levity to a decorating piece that might otherwise be notably opaque and heavy.
