This knife was really bad. It had no edge when I got it so I tried to sharpen it and it still wouldn't get sharp. I don't know what it's made of, but whatever it is it's not appropriate for a chef's knife. I am experienced with knives and can state definitively that this one is a dud.
I've only had this knife for like 2 weeks so I can't really say much about it keeping it's edge other than "it's still sharp so far". I do like the knife though, I like this size and my wife likes the handle. I just like not rubbing my knuckles on the cutting board constantly.
This Berghoff 7" Santoku knife was a real super bargain for the price.It is a really sturdy, fantastic looking, super sharp santoku.I been chopping all night since i received it.Maybe i'll go cut down some trees next.I just really like the knife.
