Tim Holtz, in his "Creative Chemistry 101" class, advised us to remove the backing and adhere the canvas to your craft sheet.
If the backing gets wet, it will curl and therefore curl your canvas.
The craft sheet will stay flat when wet... and you can stick and unstick the canvas repeatedly.
Added bonus - when the canvas has dried, the removed backing can still be used as a release paper if you're not ready to fix the canvas to your final project.
With the advice given you by Ranger and taught by Tim, I've been happy with both the natural and white sticky back canvas.
(BTW, neither the natural nor the white sticky back canvas is gessoed, which is why you can use mediums that gessoed canvas would resist)
