I appreciate the section of Understanding Gluten-free Flours, Doughs and batters as well as the Pie Crust Tutorial. He also discussed techniques for adding flavor which I have found to be of great use.. I really like his use of simple ingredients and no fuss recipes. Most of the recipes include ingredients that I have on hand. There are hard- to-find gluten-free favorites such as Southern- style Chicken and Dumplings and Sugar-Glazed Cinnamon Rolls. I'll be using this book quite often.
