    DENIS KELLY is a California-based writer and teacher who co-authored THE COMPLETE MEAT BOOK, FLYING SAUSAGES, and REAL BEER AND GOOD EATS with Bruce Aidells.

      We've been using this book constantly for several years now. Great, easy recipes! Please note that the spicy sausage is really really spicy, we use about 1/4 of the spice as it calls for. If we lose this book, we will definitely buy it again.

      I gave this book to my brother-in-law for xmas. He's been recently making sausages at home and I wanted to find him a new book with more healthy options. I was VERY happy to see many of Adelle's signature recipes here! Apple-Chicken sausage recipe for instance - turned out fantastic and tasted exactly like the store brand minus the nitrates. As a plus the book includes many recipes that use the sausage recipes in them... Some delicious ideas! GREAT book, GREAT price, and easy to read instructions. Highly recommended to new and experienced sausage makers.

      Bruce Aidells has been a huge name in sausage-making for a very long time. In this book, he not only gives great tips on sausage-making, including how to use "additives" not included in recipes to add to the flavor, texture, and stability of sausage, but also great tips on the actual making of sausage, and of course, great recipes. But that's not all! He has also broken the book up into America's regions and gives a lot of interesting facts on the development of the styles of sausage for each region, as well as recipes typical of the region to use the sausages he shows how to make. On top of all that, the book is peppered with personal stories of his travels and experiences across the country.Bruce Aidell is much more than a great maker of sausages. He is a teacher; explaining techniques in easy to follow language. Finally, he is an entertaining storyteller, mixing entertaining tales into the book, making it much more than a recipe book, and more like a great read that will teach you about sausage and how to best enjoy it. I would recommend it highly for anyone wanting to make sausages!
