I own many canning and preservation books. This is the one book to own if you must only get one. Information is thorough and complete. This book reflects the complexities (read this as good) of America's trend to make gourmet dishes. The book includes the basics as well. You will not have to wonder how can I kick this recipe up a notch--the recipes have already included this aspect of the dish. Highly recommended and bound for the classics.
