My very favorite cook book. If you like Anthony Bourdain, you will love this! He very thoroughly explains everything so well that even if you've never made the dish, you'll do a good job on the first try. He uses his snarky comments throughout the book to make it a very entertaining book aside from the cooking. I absolutely suggest this book to all of my friends! Love it!

Great recipes, very traditional. Finally a book that's not afraid to give the true three-day way to cook tripes properly! But if you don't like "the nasty bits" (hearts, livers, kidneys and the like), this book is probably not for you...
