I love this book, but the recipes are very involved and time consuming, not for everyday cooking but more for special occasions. I love his salad dressing recipes.

The pictures are luscious; the recipes are great for someone who is learning to cook or a (pardon the pun...) seasoned chef. It never assumes anything. It's not condescending or assuming and Thomas Keller went to a lot of trouble to sound sincere and accessible. This is my "go-to" cookbook now and has crowded out the other 200+ I have collected. It has emerged as a stellar favorite! You will never regret purchasing this cookbook. And if you get a chance - go to his restaurant...it's an inspired cookbook with emphasis on family style. Which means - even for people with a small household - you get the benefit of making a meal to share or a meal that can go in the freezer or vacuum bags. Cook once; eat twice.
