    This is a famous cookbook for good reason. The recipes are something one could make at home but are complex in taste but not difficulty. Absolutely beautiful cookbook. Makes a superior gift for anyone who enjoys food.

    I love this book, but the recipes are very involved and time consuming, not for everyday cooking but more for special occasions. I love his salad dressing recipes.

    This is a cookbook that lives up to the media mentionings, positive reviews and hype. The pictures are luscious; the recipes are great for someone who is learning to cook or a (pardon the pun...) seasoned chef. It never assumes anything. It's not condescending or assuming and Thomas Keller went to a lot of trouble to sound sincere and accessible. This is my "go-to" cookbook now and has crowded out the other 200+ I have collected. It has emerged as a stellar favorite! You will never regret purchasing this cookbook. And if you get a chance - go to his restaurant...it's an inspired cookbook with emphasis on family style. Which means - even for people with a small household - you get the benefit of making a meal to share or a meal that can go in the freezer or vacuum bags. Cook once; eat twice. I AM TOTALLY IN LOVE WITH this CONCISE, inventive and fresh take on comfort cuisine. My family loves it, too. Buying more right NOW! p.s. It helps you with technical info, too. If you don't know how to break down a chicken or string truss a roast - you will learn all these handy tricks!

He does not disappoint, providing a thorough primer on the foundations of cooking, offering clear and easy-to-follow instructions on techniques such as butchering and trussing chickens and tying a pork loin. He also includes a section on becoming a better cook, which helps fine-tune the cook and instructs on using salt properly, learning to make one really good soup and getting organized. Throughout are helpful sidebars that clarify potentially murky subjects, including brining fish and meat, salad basics and using fats. Dishes such as braised beef short ribs, buttermilk fried chicken, and fig-stuffed roast pork loin highlight a vast array of offerings that range from crab cakes to shortbread cookies. This collection is what legions of Keller fans have been waiting for, a book that allows them to replicate the merest glimmer of his culinary genius in their own homes. (Nov.)
